Fan of W. Somerset Maugham? Loved Season 7 of Top Chef? Then you are probably familiar with the iconic Raffles Hotel and its signature drink, the Singapore Sling, an old-school, fruity, gin-based cocktail.
Most connoisseurs agree that the drink was first slung at the Raffles Hotel by a bartender named Ngiam Tong Boon. They don’t agree on much else. Each book and website that I consulted offered a completely different recipe! Ngiam Tong Boon’s original recipe has been lost and the “official” version served at the hotel’s famous Long Bar (recipe here) is pre-mixed, very expensive, and far from the concoction shaken and served in colonial Singapore.
The recipe I’ve dug up is frequently cited as the earliest known Singapore Sling recipe, then called the “Straits Sling”:
